 
	Ingredients:
 
60 large chillies
	
1 cup raisins
8 cloves garlic	
2½ cups vinegar
2 tsp ginger 
2 cups sugar
2 tsp salt
Method:
 
Mix all ingredients together and bring to the boil. Simmer for ½ to ¾ hour.
Blend and bottle.
For a variation, replace raisins with dates, figs, apricots or sultanas.
