 
	Ingredients:
6 lbs ripe mango, peeled and diced
  
3 cups sugar
 
2 bottles brown vinegar 
 
1 tsp cayenne pepper
  
1 Tbl salt
 
½ oz. mixed spice 
 
½ oz. root ginger 
 
1 oz. cloves
 
3 oz. garlic
Method:
 
Boil 2½ hours, strain and bottle.
