 
	Ingredients:
 
1 cup plain wholemeal flour
 
1 tsp bicarb. soda
 
½ tsp mixed spice
2/3 cup of oil
1 cup grated rind
½ cup sugar or honey
 ½ tsp cinnamon
2 eggs (pref. free range)
 ½ cup coconut
 1 cup of guava flesh (no seeds)
Method:
 
Sift dry ingredients together. Stir in egg, oil, and guava. Pour into cake tin. Bake in 165ºC oven ½ to ¾ hour.
